Enjoy!

Stor kram Maya ♥

Last week it was the waffle day in Sweden, but anyway, a week late here is my delish waffle that med and my boyfriend did the other day. I thought that why not celebrate the waffle which day you want and if you then also tried doing your own raw ice cream that it would fit perfectly to eat together.

Desserts, cakes and other goodies are not something I normally indulge in, but these waffles with my choco-raspberry ice cream topped with coconut cream and fresh blueberries. OMG, they are good… I am almost eager to do them right now. Of course, they are even gluten-free and without eggs. So, completely vegan.

Vegan waffles: I made these waffles on a base of Finax gluten-free and dairy-free flour mix. Actually, I’m not a big fan of the cornstarch they use in their flour mix, but sometimes I even ignore such things. The binder I used instead of eggs was a banana and 1-2 tbsp chia pudding. It worked great and the waffle as you can see is perfect!
Coconut cream I made with organic coconut milk. I took the thick skin formed on the top and whipped it up with a spoon. I poured the coconut milk on the waffle batter and added a pinch of vanilla powder and salt. Then you are ready to bake, Enjoy!

Big hug Maya ♥
